Shrimp Linguine

One of our favorite “go to meals” is super easy and kind to the waistline.  I try to always have shrimp in the freezer.  It’s easy to thaw and quick to cook.  If you’re not a fan of shrimp, feel free to replace the shrimp with grilled chicken or even grilled Italian sausage.Shrimp Linguine

  •  8 oz. linguine or your favorite pasta
  •  olive oil – two turns in the pan
  • 1/3 cup white wine (or omit and replace with chicken stock)
  • 1/3 cup chicken stock/broth
  • 4 chopped garlic cloves
  • 1/2 red onion or 2 shallots, chopped
  • 1 tablespoon real butter
  • fresh mushrooms, sliced, stems removed, small package
  • 1/8 teaspoon red pepper flakes (bit more for those of us who like heat)  OR a jalapeno pepper to taste
  • Large hand full of fresh spinach
  • 1/2 a zucchini sliced or broccoli or asparagus
  • shrimp – I usually plan 6 to 8 per person
  • 2 tablespoons fresh, chopped Italian parsley
  • Parmesan cheese

Start cooking the pasta.  In a separate large pot or deep skillet heat olive oil, add mushrooms.  Cook mushrooms about five minutes then add onion, garlic and red pepper flakes/jalapeno.  After about three minutes add butter, zucchini or any other veggie you prefer.  (if using broccoli, add florets to pasta pot and boil with noodles)  Add salt and pepper to taste.  Add white wine and continue to cook five minutes.  Add chicken stock and shrimp.  Simmer on medium to low heat for five to eight minutes. Add spinach once shrimp is almost cooked through. Once spinach is totally wilted, remove from heat, add parsley.  Drain the pasta, add pasta to veggies and shrimp.  Mix well.  Serve topped with Parmesan cheese.

I change-up the veggies routinely depending on what I have on hand and what looks the fresher at the market.  As a side note;  canned or boxed stock has a tendency to take up quite a bit pantry and refrigerator space.  When I only need a third of a cup for this and similar recipes, I found this product very useful and space friendly.  It’s called “Better Than Bouillon” and can be found at Walmart.  It’s great for recipes calling for a small amount of stock.  Enjoy!  Let me know what you think.
