Eggs Benedict for Sunday Brunch

Sundays are fun days in my book. When I ran my own business, it wasn’t uncommon for me to work seven days a week, and although I thought I was doing a great job, such was not the case. At some point, it was brought to my attention that burn out was setting in. I could feel it, but didn’t want to acknowledge it.

I wasn’t doing myself, my customers, or my family any favors by being a work alcoholic and not taking a day off work. We all need time to recharge, and Lord knows, I definitely needed time to recharge. That’s when I made Sundays my day off, my fun day, and began focusing on myself and my family. I made a rule; absolutely no business on Sunday …. well, maybe just a little bit here and there 😉. Taking Sunday’s off was such a smart decision and Sunday Brunch’s became something our family looked forward to.

Now that we’re semi-retired, I don’t need to make a conscious effort to take time off work, but that still hasn’t changed how I view Sundays. It’s still our day to relax and do something fun. And sometimes that fun revolves around food …. or boating …. or hiking …. or hanging with friends ….. or all of the above.

Al loves Eggs Benedict, but it’s a rare treat. All that Hollandaise sauce isn’t exactly waist friendly, but then again, that’s not something he wants to hear. Also, considering all the elements needed to make Eggs Benedict, it can be a little challenging to make, especially in a small kitchen like a RV.

We recently spent a couple of weeks this past September visiting friends in Lake Havasu City, Arizona. We had a fabulous time. More on that to come. With a full size kitchen at my disposable, I quickly and willingly stepped up to the title of resident cook.

Al didn’t waste anytime putting in his order for Sunday Brunch, and it turns out our friends are every bit the Eggs Benedict fanatics that Al is. Me? Nope! I make it, but don’t eat it. I don’t like Hollandaise sauce or Canadian bacon. A plain toasted English muffin with a couple of over easy eggs on top and I’m happy. Ooh, and let’s not forget a few Mimosa’s for this gal. Everyone else can enjoy their Bloody Mary’s while I cook and down champagne and orange juice.

So grab your favorite beverage, and let’s get cooking. Since Eggs Benedict comes together very quickly, we need to be organized and have everything on the counter and stove ready to go. Seriously, you’ll be serving your friends a wonderful Eggs Benedict in less than twenty minutes from start to finish.

double boiler Hollandaise sauceWhat you’ll need for the Hollandaise Sauce is a double boiler or some version of one. I prefer my make shift double boiler which consists of a medium sauce pan and a glass mixing bowl (my glass bowl is microwave safe and heat safe).

I fill the pot with about two to three inches of water making sure the water doesn’t touch the bowl. Of course, we’ll need a whisk.

Next we need two frying pans. Since I don’t have room on my stove top for two large frying pans, I use a small one for the Canadian bacon and a large one for the eggs. When I’m pressed for time or space, I’ve been known to put the Canadian bacon in the microwave, freeing up stove space, but shhh, don’t tell Al. He’s not a fan of microwaved bacon. The large frying pan is for frying the eggs over easy. I know, I know …. real Eggs Benedict is made with poached eggs, but without my poacher, I prefer to fry the eggs. My kitchen, my rules 😁

Since we’ll be toasting English muffins, the more toaster slots the better and this is when I enlist the help of my guests. I put them in charge of toasting the muffins. Just make sure the toasters and guests are out of your way because things will happen fast.

Hollandaise sauce double boilerWith all our equipment ready to go, let’s make sure all our ingredients are within easy reach.

8 eggs
4 egg yolks
1/2 cup softened butter
lemon juice
Canadian Bacon (at least 8 slices)
4 English muffins, split
Salt and Pepper

Surrounded by all our ingredients and equipment, we’ll start making the Hollandaise Sauce first. Once we’re done whisking together the sauce, turn the heat on the burner off but keep the sauce warm by letting it sit over the hot water. Stir the sauce from time to time making sure it doesn’t curdle as you start frying the Canadian bacon and cooking the eggs. While you’re tending to the stove, have your friends pop the muffins down in the toaster.

Once the eggs are fried over easy, it’s time to assemble. Place one toasted English muffin open-faced on a plate and put one or two slices of Canadian bacon on each half. Place an egg on the bacon then top with Hollandaise Sauce. Finish off with a pinch of salt and pepper and enjoy.

Hollandaise Sauce

  • Servings: 4
  • Difficulty: easy

Hollandaise sauce, eggs benedict4 egg yolks
1/2 cup softened butter
2-3 teaspoons lemon juice
salt and pepper to taste

Once the water in the bottom of a double boiler is boiling, whisk together the eggs and half the butter in the top of the double boiler. Be sure the water in the bottom pot doesn’t touch the bottom of the top pot. Continue whisking the butter and eggs making sure the eggs don’t curdle. Once the butter is melted, add the remaining butter, 2 teaspoons lemon juice, and salt and pepper. Stir constantly until all butter is melted.

If the sauce is too thin, let it sit without stirring. It should start to thicken. If it gets too thick or curdles, add a teaspoon of lemon juice or water.

Serve over Eggs Benedict or your favorite vegetable.

After breakfast, it was time for a boat ride. Yeah, I could get used to this!

  1. Yum! I will have to try your recipe sometime. Eggs benedict is my absolute favorite breakfast dish! My daughter and I have a “thing” to search for the best eggs benedict in a restaurant anywhere, and right now, a little place in Sausalito, just north of the Golden Gate Bridge, still holds that distinction. I like your take of just using a fried egg, too. That is doable! I just had a hamburger in the DC area with a fried egg, sharp cheese and bacon on it. Give it a try sometime… was soooo good! Thanks for sharing your recipe. Looks like you had a sweet time at the lake!

    1. My husband loves an egg on his hamburger -add a little bacon and he’s in heaven. It’s always fun changing up a dish and playing around with tasty ingredients. Let me know if you whip up the eggs bennie at home. And yes, I had an amazing time out on Lake Havasu.

We are switching our phones to Verizon, and we already have a Verizon hot spot ..We had to buy new phones and step into the 2000’s.We are always behind the times..I sooo get it about hubby active in the market..Dennis is too, and spends lots of time at our computer…I have to shove him out of the way if I need to get on…Love your recipe..and LOVE eggs benedict!!

    1. Oh my, there is no way we would survive sharing a computer. We have two laptops, an iPad, and my desktop computer is at my son’s house. Even though I’m not a fan of Eggs Benedict, everyone I’ve made this for says it’s very good. All I can attest to was a delicious mimosa 😉

  3. Hard to beat a pontoon ride on a pretty day. I’m also a fan of eggs benedict but rarely make them for just the two of us due to the effort involved. But like you “A plain toasted English muffin with a couple of over easy eggs on top and I’m happy” – this is my go to breakfast and my plan for this morning.

    1. That was my first time out on a pontoon boat and loved it. We’ve always owned ‘run abouts’. Yep, eggs bennie is an occasional treat around the RV. I think English muffins and eggs are on the menu today ☺

  4. I’m also not a fan of bacon with eggs benedict, but over smoked salmon, spinach, or my favourite – fresh steamed asparagus, and they’d be my choice every time. I prefer a good sour dough, or whole grain toast to the muffins too – I wonder if those changes still justify it being called eggs benedict!
    We’re like you, even though semi retired, Sunday’s are still brunch day. We also have ‘boiled egg Saturday’, and ‘finger food Friday’. All remnants from when we worked a Monday to Friday week. Observing the old rituals keeps us in touch with which day of the week it is.

    1. All those options sound yummy. So many ways to mix it up. Yes, it’s nice to maintain some of the rituals from our previous life. Half the time, we’re not sure what day of the week it is 😄 That’s a good thing. Means we’re having fun!

  5. I have only had Eggs Benedict once!! I just try to eat really healthy since my cancer!! Mike would probably like them!!! I’ll save the recipe and give it a try!!

    1. Oh yeah – loved being out on the water. I didn’t realize how much I’ve missed it. We too try to eat healthy, which is why this breakfast was such a treat for Al. I believe in all things in moderation.

  6. I don’t like Eggs Benedict but Dave really loves them. We save that treat for a restaurant chef to produce for him while I enjoy something else. I do, however, love Hollandaise sauce over steak oscar but I make mine the lazy way – in the blender! I agree, you can make anything in our tiny kitchen….just takes more forethought! Love the picture of you in the boat.

    1. It was wonderful to get back out on the water. Oh, how I’ve missed it. Cooking in this small kitchen can occasionally be irritating, but when I look out the window at beautiful scenery, it’s all worth it.

  7. I love Eggs Benedict — I make it with smoked salmon and spinach. It’s a good thing it’s more work than my usual scrambled eggs with smoked salmon or I wouldn’t fit into my jeans. :-)) You look so relaxed and happy on the boat!

    1. I loved being back out on the water…. happy camper! So many delicious ways to make various versions of Eggs Benedict, but I don’t think any are waist friendly. Thus, it shall remain a special treat!

  9. Seems like when you run your own business taking any time off can feel like you are neglecting something that needs to be done. Time off comes in small increments. I hear you when you wrote you need to recharge to be effective.

    I started keeping my most favorite photos in a directory so I look at them all at once. Hmm, in 2017 so far there are 11 in the favorites folder. It’s amazing how many of your photos would make it into my favorites. Can’t wait to be at similar locations and get a few of my own!

    Do you still work from your trailer or were you referring to workcamping jobs? We just met up with Steve and Debbie of the Down the Road Blog. Steve works fulltime from their trailer. Got some interesting ideas from him on how he manages his time and what equipment he is using. I’ll be working from the trailer 10 hours a week. I learned a laptop will be best so I can drive down the road in case I’m without an internet connections. Also figure I’ll get a small screen to split the view with the laptop when needed rather than taking the current all-in-one PC with us. Steve using a Verizon hotspot (on his phone) for everything. I had wondered if he spent a lot on fancy booster equipment and such. Was surprised he had not. Simple is sometimes the best route.

    1. We only Workamped once and I doubt we would do it again. For us, it just isn’t cost effective. I think it’s awesome and ideal that you’ll be able to work at something familiar and at 10 hours a week, you’ll have plenty of time to explore.

      Just like Steve and Debbie, we use a Verizon hotspot without anything else special. Hubby is an active market trader and thus is occasionally tied to the computer during the day, which is why I can be found out and about exploring by myself with the camera. We’ve discovered how we like to travel and how to maintain a tight budget.

I love to cook too, so I have enjoyed many delicious foods on camp fires and compromised kitchens, but this one tops all. Loved the photo of you on the boat. As always, a fun time here.

    1. And I make escargot and bananas foster while camped in the boonies … such talent 😆 Actually, anything that can be made in a sticks and bricks house, can be made in a RV – just takes a little foresight and organization. And friends to share always helps!
